Salami is cured sausage fermented and usually air-dried. It can be stored at room temperature for periods of up to 30 to 40 days once cut. It also makes an excellent "hot cooked" Cotto style salami. Bailey's Old Time North Idaho Salami Seasoning pack will make 100 pounds of salami.
